Ib. Snapper
1 thsp. lemon juice
1 onion, chopped
1 Stalk escallion
1 sprig fresh thyme
1 cup coconut milk
2 tbsp. bread crumbs
1 tbsp. butter
1/2 salt and black pepper |

- Clean fish and sprinkle with lemon juice.
- rub salt and black pepper on snapper.
- Chop onion, escallion and thyme. Mix season with
butter then rub it on the snapper.
- Place in greased ovenproof dish.
- Pour coconut milk on fish, sprinkle with bread crumbs.
- Bake for 15 to 20 minutes at 350� F.
