2 lb. soup bones or stewing steak
2 lb. pumpkin
1 lb. yam
2 stalks escallion
1 clove garlic
1 sprig thyme
1 green pepper
1 inch. Jamaican ginger root (minced)
5 qt. water
(1) Place soup bones or stewing steak in about 5qt. water to boil
until meat is cooked.
(2) Add pumpkin, yam and other seasoning (except gingers). Boil
until pumpkin and yam
are soft. Remove pumpkin, blend or crush pumpkin and return to stock.
Take out green pepper and discard.
(3) Taste and correct seasoning, if necessary.
(4) Add minced ginger to each soup plate.
