Ib. goat's head, tripe and feet
3 gallons water
2 Ib. yam
1 lb.flour
4 stalks escallion
4 sprigs thyme
1/2 Ib. carrots
3 chochos
12 green bananas |

- Chop meat into small pieces then wash.
- Place in a pot with water, add
salt to taste. Boil until meat is
cooked.
- Add yam,bananas, carrots, chochos
and seasonings. Cook for 1 hour
- Use flour to make dumplings then add to pot.
- Simmer until all ingredients are cook
- Add more water if necessary. Serve hot.
